  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups chopped apples
  • 1/2 cup brown sugar
  • 1/4 cup rolled oats
  • 1/4 teaspoon nutmeg
  • 1/4 cup powdered sugar (for glaze)
  • 1 tablespoon milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, mix together the flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk; mix until just combined.
  6. Gently fold in the chopped apples.
  7. In another bowl, combine the brown sugar, rolled oats, and nutmeg for the crumble topping.
  8. Fill each muffin cup about two-thirds full with the batter, then sprinkle the crumble topping over each muffin.
  9. Bake for 20-25 minutes, or until a toothpick comes out clean.
  10. For the glaze, whisk together the powdered sugar and milk until smooth, and drizzle it over the cooled muffins.

Notes
