- 8–10 slices bacon, cooked and chopped
- 1 tbsp butter or olive oil
- 1 large onion, diced
- 2 large carrots, peeled and sliced
- 4 cups chicken broth
- 16 oz gnocchi
- 2 cups heavy cream or half-and-half
- 2 cups shredded cheddar cheese
Instructions
- Cook bacon until crispy; chop and set aside.
- In a large pot, heat butter or oil over medium heat. Sauté onions and carrots until tender.
- Add chicken broth; bring to a simmer while stirring occasionally.
- Stir in heavy cream and seasoning; then gradually add cheddar until melted.
- Add gnocchi; cook for about 2 minutes until tender.
- Stir in chopped bacon, adjust seasoning if needed, and serve hot.
