Description

A flavorful and satisfying fried rice dish with a spicy-sweet bang bang sauce, customizable with leftovers.


Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 2 eggs, beaten
  • 1 cup mixed veggies (such as bell peppers, peas, and carrots)
  • 2 tablespoons vegetable oil
  • 3 tablespoons bang bang sauce
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the mixed veggies and sauté until tender.
  3. Push the veggies to one side of the pan and pour the beaten eggs onto the other side. Scramble the eggs until fully cooked.
  4. Add the cooked chicken and rice to the pan, stirring everything together.
  5. Pour the bang bang sauce over the rice mixture and stir until evenly coated.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped green onions before serving.

Notes

Use cold, day-old rice for the best texture. Add toasted sesame seeds or cashews for extra crunch.
