Ingredients

- 2 cups cooked rice
- 1 cup cooked chicken, diced
- 2 eggs, beaten
- 1 cup mixed veggies (such as bell peppers, peas, and carrots)
- 2 tablespoons vegetable oil
- 3 tablespoons bang bang sauce
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the mixed veggies and sauté until tender.
- Push the veggies to one side of the pan and pour the beaten eggs onto the other side. Scramble the eggs until fully cooked.
- Add the cooked chicken and rice to the pan, stirring everything together.
- Pour the bang bang sauce over the rice mixture and stir until evenly coated.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
Notes
Use cold, day-old rice for the best texture. Add toasted sesame seeds or cashews for extra crunch.
