Delicious and comforting BBQ Chicken Quesadillas, perfect for a quick and satisfying meal.

- 2 cups cooked shredded chicken
- 1/2 cup barbecue sauce
- 2 cups shredded cheddar cheese
- 4 large flour tortillas
- 1/4 cup chopped green onions (optional)
- 2 tablespoons olive oil
Instructions
- Combine the shredded chicken and BBQ sauce in a bowl, mixing until well coated.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Place one tortilla in the skillet and sprinkle 1/2 cup of shredded cheese over it.
- Spread 1/2 cup of the BBQ chicken mixture over the cheese and top with another 1/2 cup of cheese.
- Cover with a second tortilla and cook for 3-4 minutes until golden brown on the bottom and the cheese starts to melt.
- Flip the quesadilla and cook for another 3-4 minutes until golden on both sides and cheese is fully melted.
- Remove from skillet and repeat with remaining tortillas and filling.
- Slice into wedges, garnish with green onions if desired, and serve warm.
Notes
For a twist, try different cheeses or add jalapeños for a spicy kick.
