Description

Delicious and comforting BBQ Chicken Quesadillas, perfect for a quick and satisfying meal.


Ingredients

  • 2 cups cooked shredded chicken
  • 1/2 cup barbecue sauce
  • 2 cups shredded cheddar cheese
  • 4 large flour tortillas
  • 1/4 cup chopped green onions (optional)
  • 2 tablespoons olive oil

Instructions

  1. Combine the shredded chicken and BBQ sauce in a bowl, mixing until well coated.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Place one tortilla in the skillet and sprinkle 1/2 cup of shredded cheese over it.
  4. Spread 1/2 cup of the BBQ chicken mixture over the cheese and top with another 1/2 cup of cheese.
  5. Cover with a second tortilla and cook for 3-4 minutes until golden brown on the bottom and the cheese starts to melt.
  6. Flip the quesadilla and cook for another 3-4 minutes until golden on both sides and cheese is fully melted.
  7. Remove from skillet and repeat with remaining tortillas and filling.
  8. Slice into wedges, garnish with green onions if desired, and serve warm.

Notes

For a twist, try different cheeses or add jalapeños for a spicy kick.
