One-Pot Lasagna Soup

Description

A cozy, one-pot meal that combines the flavors of lasagna in a comforting soup, perfect for busy weeknights.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef (or Italian sausage)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 2 tablespoons tomato paste
  • 1 (28-ounce) can crushed tomatoes
  • 6 cups beef or chicken broth
  • 8 ounces dry lasagna noodles, broken into 2-inch pieces
  • 1/2 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella, plus extra for serving
  • 1/2 cup grated Parmesan
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the ground beef and cook until browned. Break it up as it cooks. Drain excess fat if needed.
  2. Add the diced onion and cook until soft, about 4 minutes. Stir in the garlic and cook for 30 seconds until fragrant.
  3. Stir in the Italian seasoning and tomato paste. Cook for 1–2 minutes to bloom the flavors.
  4. Add the crushed tomatoes and broth. Bring the pot to a simmer. Season with salt and pepper.
  5. Add the broken lasagna noodles. Simmer uncovered for 10–12 minutes, stirring occasionally, until the noodles are tender.
  6. Remove the pot from heat. Stir in the ricotta, mozzarella, and Parmesan until creamy and melted. Taste and adjust seasoning. If the soup is too thick, add a splash of broth.
  7. Serve hot with an extra sprinkle of cheese and fresh basil.

Notes

For a vegetarian version, swap the meat for chopped mushrooms and lentils. Add spinach for extra greens.
