- 1 tablespoon olive oil
- 1 pound ground beef (or Italian sausage)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 teaspoons Italian seasoning
- 2 tablespoons tomato paste
- 1 (28-ounce) can crushed tomatoes
- 6 cups beef or chicken broth
- 8 ounces dry lasagna noodles, broken into 2-inch pieces
- 1/2 cup ricotta cheese
- 1 1/2 cups shredded mozzarella, plus extra for serving
- 1/2 cup grated Parmesan
- Salt and black pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions
- Heat the olive oil in a large pot over medium-high heat. Add the ground beef and cook until browned. Break it up as it cooks. Drain excess fat if needed.
- Add the diced onion and cook until soft, about 4 minutes. Stir in the garlic and cook for 30 seconds until fragrant.
- Stir in the Italian seasoning and tomato paste. Cook for 1–2 minutes to bloom the flavors.
- Add the crushed tomatoes and broth. Bring the pot to a simmer. Season with salt and pepper.
- Add the broken lasagna noodles. Simmer uncovered for 10–12 minutes, stirring occasionally, until the noodles are tender.
- Remove the pot from heat. Stir in the ricotta, mozzarella, and Parmesan until creamy and melted. Taste and adjust seasoning. If the soup is too thick, add a splash of broth.
- Serve hot with an extra sprinkle of cheese and fresh basil.
Notes
For a vegetarian version, swap the meat for chopped mushrooms and lentils. Add spinach for extra greens.
