Deliciously soft and gooey blondies infused with Biscoff cookie butter, perfect for any sweet tooth.

- 1 cup unsalted butter
- 1 cup Biscoff cookie butter
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup white chocolate chips
- 1/2 cup crushed Biscoff cookies
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper.
- In a medium saucepan, melt the unsalted butter and Biscoff cookie butter over low heat, stirring occasionally until smooth.
- Remove from heat and let cool for about 5 minutes.
- Add the brown sugar and whisk until smooth.
- Crack in the eggs and whisk until well incorporated.
- Stir in the vanilla extract.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, being careful not to overmix.
- Fold in the white chocolate chips and crushed Biscoff cookies.
- Pour the batter into the prepared pan and smooth it out.
- Bake for 25 to 30 minutes, or until a toothpick comes out clean.
- Let cool in the pan on a wire rack for about 10 minutes before transferring to cool completely.
- Cut into squares and enjoy!
Notes
Serve warm with a scoop of vanilla ice cream. Store in an airtight container at room temperature for up to a week.
