A comforting bowl of Black Beans and Rice with Sausage, hearty and packed with flavor.
Ingredients

- 1 can black beans, rinsed
- 1 cup rice (white or brown)
- 1 lb sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp smoked paprika
- 2 cups chicken or vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Brown the sausage in a large pot over medium heat until crispy, then set aside.
- Sauté chopped onions and minced garlic in the same pot until softened and fragrant.
- Add rice, cumin, smoked paprika, salt, and pepper; cook for about a minute.
- Stir in black beans and broth, bring to a boil, then reduce heat to low. Cover and simmer for about 20 minutes until rice is tender.
- Stir in the sausage to heat through and garnish with fresh cilantro before serving.
Notes
Serve warm with cornbread or tortilla chips. This dish can be topped with hot sauce for an extra kick.
