Ingredients

  • 4 eggs
  • 1 cup spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat the olive oil in a non-stick skillet over medium heat.
  2. Add the chopped spinach and sauté until it wilts.
  3. Include the cherry tomatoes and cook for another 2 minutes.
  4. Whisk the eggs together with salt and pepper in a bowl.
  5. Pour the eggs into the skillet over the spinach and tomatoes.
  6. Gently stir the eggs as they start to set.
  7. Once eggs are almost cooked through, sprinkle the feta cheese on top.
  8. Cook for another minute until the feta is warmed and the eggs are fully set.
  9. Serve immediately and enjoy!
