- 4 Roma tomatoes, seeded and diced
- ¼ cup basil leaves, finely chopped
- 1 garlic clove, minced (for the tomato mixture)
- 1 tablespoon extra virgin olive oil (for the tomatoes)
- 1–2 teaspoons balsamic vinegar
- Salt, to taste
- 8 oz feta cheese block, crumbled
- ½ block cream cheese (4 oz), softened
- ½ cup sour cream
- 1 garlic clove, minced (for the cheese mixture)
- 1 tablespoon lemon juice, freshly squeezed
- 1 tablespoon olive oil (for the cheese mixture)
- Salt, to taste
- More basil leaves, chopped for garnish
- Red pepper flakes, to taste
- Parmesan cheese, freshly grated for finishing
Instructions
- Dice the Roma tomatoes and place them in a bowl.
- Add chopped basil and one minced garlic clove.
- Drizzle with extra virgin olive oil and add balsamic vinegar.
- Season with a pinch of salt. Toss gently. Set aside to marinate while you make the cheese base.
- In a medium bowl, add crumbled feta, softened cream cheese, and sour cream.
- Add the second minced garlic clove, lemon juice, and olive oil.
- Use a hand mixer or sturdy spoon to blend until smooth and creamy.
- Taste and add salt if needed.
- Spoon the cheese mixture into a shallow serving bowl. Smooth the top.
- Pile the marinated bruschetta mixture over the cheese base.
- Sprinkle chopped basil, red pepper flakes, and grated Parmesan.
- Serve right away with crunchy bread or crackers.
Notes
Store leftovers in an airtight container in the fridge. Keep the tomato topping and cheese base separate if possible.
