Description

A vibrant and flavorful party dip featuring fresh tomatoes, basil, and creamy cheeses.


Ingredients

  • 4 Roma tomatoes, seeded and diced
  • ¼ cup basil leaves, finely chopped
  • 1 garlic clove, minced (for the tomato mixture)
  • 1 tablespoon extra virgin olive oil (for the tomatoes)
  • 12 teaspoons balsamic vinegar
  • Salt, to taste
  • 8 oz feta cheese block, crumbled
  • ½ block cream cheese (4 oz), softened
  • ½ cup sour cream
  • 1 garlic clove, minced (for the cheese mixture)
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon olive oil (for the cheese mixture)
  • Salt, to taste
  • More basil leaves, chopped for garnish
  • Red pepper flakes, to taste
  • Parmesan cheese, freshly grated for finishing

Instructions

  1. Dice the Roma tomatoes and place them in a bowl.
  2. Add chopped basil and one minced garlic clove.
  3. Drizzle with extra virgin olive oil and add balsamic vinegar.
  4. Season with a pinch of salt. Toss gently. Set aside to marinate while you make the cheese base.
  5. In a medium bowl, add crumbled feta, softened cream cheese, and sour cream.
  6. Add the second minced garlic clove, lemon juice, and olive oil.
  7. Use a hand mixer or sturdy spoon to blend until smooth and creamy.
  8. Taste and add salt if needed.
  9. Spoon the cheese mixture into a shallow serving bowl. Smooth the top.
  10. Pile the marinated bruschetta mixture over the cheese base.
  11. Sprinkle chopped basil, red pepper flakes, and grated Parmesan.
  12. Serve right away with crunchy bread or crackers.

Notes

Store leftovers in an airtight container in the fridge. Keep the tomato topping and cheese base separate if possible.
