- 8 oz pasta (penne or rotini)
- 1 lb smoked sausage (sliced)
- 1 tablespoon Cajun seasoning
- 1 bell pepper (chopped)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or pepper jack)
- Salt and pepper to taste
- Olive oil for cooking
- Chopped parsley for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat and sauté the sliced sausage until golden brown.
- Add the chopped onion, bell pepper, and minced garlic, cooking until softened.
- Stir in the Cajun seasoning and cook for another minute.
- Add the pasta with enough water to cover it, bring to a gentle boil, and cook until al dente.
- Lower the heat, stir in the heavy cream and shredded cheese, and mix until melted and creamy.
- Season with salt and pepper to taste and serve warm, garnished with chopped parsley if desired.
Notes
