Description

Ingredients

  • 8 oz pasta (penne or rotini)
  • 1 lb smoked sausage (sliced)
  • 1 tablespoon Cajun seasoning
  • 1 bell pepper (chopped)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or pepper jack)
  • Salt and pepper to taste
  • Olive oil for cooking
  • Chopped parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté the sliced sausage until golden brown.
  2. Add the chopped onion, bell pepper, and minced garlic, cooking until softened.
  3. Stir in the Cajun seasoning and cook for another minute.
  4. Add the pasta with enough water to cover it, bring to a gentle boil, and cook until al dente.
  5. Lower the heat, stir in the heavy cream and shredded cheese, and mix until melted and creamy.
  6. Season with salt and pepper to taste and serve warm, garnished with chopped parsley if desired.

Notes
