Ingredients

  • 2 tablespoons Olive Oil
  • 1 pound Ground Beef
  • 1 medium Yellow Onion, diced
  • 2 cloves Garlic, minced
  • 1/4 cup All-Purpose Flour
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream
  • Salt, to taste
  • Pepper, to taste
  • Onion Powder, to taste
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Paprika
  • 1 cup Matchstick Carrots
  • 1 1/2 cups Uncooked Macaroni Noodles
  • 1 cup Shredded Cheddar Cheese
  • 1/2 cup Shredded Parmesan Cheese

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and cook until soft, stirring often.
  3. Add the garlic and cook for one minute, being careful not to burn it.
  4. Add the ground beef, breaking it up with a spoon, and brown until no pink remains. Drain any excess fat if needed.
  5. Sprinkle the flour over the beef and stir, cooking for one minute to remove the raw flour taste.
  6. Slowly pour in the chicken broth while stirring to avoid lumps.
  7. Add the heavy cream, salt, pepper, onion powder, Italian seasoning, and paprika, and stir to combine.
  8. Add the matchstick carrots and uncooked macaroni, then bring the soup to a gentle boil.
  9. Reduce heat and simmer until the pasta is tender, stirring occasionally.
  10. Remove from heat and stir in cheddar and Parmesan until melted and smooth. Taste and adjust seasoning. Serve hot.

Notes

For extra flavor, add a sprinkle of extra cheddar or chopped fresh parsley when serving. Pair with a simple green salad or crunchy pickles.
