Description

Crispy, buttery Cheesy Gruyère Crackers made with sourdough discard, Parmesan, and thyme. A gourmet snack that’s simple to make at home.


Ingredients

1 cup sourdough discard

1 cup all-purpose flour

4 tbsp cold butter (cubed)

½ cup Gruyère cheese, grated

¼ cup Parmesan cheese, grated

1 tsp fresh thyme leaves (or ½ tsp dried)

½ tsp salt


Instructions

1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.

2. Mix flour, salt, butter, and cheeses until crumbly.

3. Add sourdough discard and thyme, mixing into a soft dough.

4. Roll out thin between two sheets of parchment.

5. Cut into squares, diamonds, or rounds.

6. Bake 20–25 minutes until golden and crisp.

7. Cool slightly before serving.

Notes

For gluten-free, use a 1:1 gluten-free flour blend.

For vegan, swap butter and cheeses for plant-based alternatives.
