Description
Soft, sweet sourdough discard cinnamon sugar pretzel bites, perfect for a cozy snack while reducing waste.
Ingredients
1 cup sourdough discard (100% hydration)
2 cups all-purpose flour
1/4 cup warm water
1 tsp salt
1/4 cup baking soda (for boiling)
1/2 cup granulated sugar
1 tbsp ground cinnamon
4 tbsp melted butter
Instructions
1. Mix sourdough discard, warm water, and flour until combined, add salt and knead until smooth.
2. Let dough rest for 30 minutes.
3. Divide dough, roll into ropes, cut into 1-inch bites.
4. Boil water, add baking soda, reduce to simmer.
5. Boil pretzel bites in batches for 30 seconds, remove, place on parchment-lined sheet.
6. Bake at 400°F for 12–15 minutes until golden.
7. Mix sugar and cinnamon in a bowl.
8. Brush warm bites with melted butter, toss in cinnamon sugar.
9. Serve warm with dipping sauce if desired.
Notes
Store in an airtight container for 1–2 days.
Reheat in the oven to refresh crispness.
Freeze for up to 2 months and reheat directly.
Enjoy with chocolate or caramel sauce for dipping.
