- 2 chicken breasts
- 1 cup coconut milk
- 1 cup chicken broth
- 1 cup rice (jasmine or basmati)
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Cilantro for garnishing (optional)
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, sauté until fragrant.
- Push the onions and garlic to the side and add the chicken breasts. Brown the chicken on both sides, seasoning with salt and pepper.
- Pour in the coconut milk and chicken broth, stir to combine.
- Add the rice to the skillet, bring to a simmer, then reduce the heat to low, cover, and cook for about 15-20 minutes, or until the rice is tender and the chicken is cooked through.
- Fluff the rice, serve the chicken on top, and garnish with cilantro if desired.
Notes
Serve with a crisp salad or a fried egg on top for extra richness. Can be paired with a spicy side such as bang bang fried rice.
