Description

A cozy and slightly exotic one-skillet meal where chicken browns and soaks up the flavors of creamy coconut milk and fragrant rice.


Ingredients

  • 2 chicken breasts
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 1 cup rice (jasmine or basmati)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Cilantro for garnishing (optional)

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, sauté until fragrant.
  2. Push the onions and garlic to the side and add the chicken breasts. Brown the chicken on both sides, seasoning with salt and pepper.
  3. Pour in the coconut milk and chicken broth, stir to combine.
  4. Add the rice to the skillet, bring to a simmer, then reduce the heat to low, cover, and cook for about 15-20 minutes, or until the rice is tender and the chicken is cooked through.
  5. Fluff the rice, serve the chicken on top, and garnish with cilantro if desired.

Notes

Serve with a crisp salad or a fried egg on top for extra richness. Can be paired with a spicy side such as bang bang fried rice.
