Description
Bright, zesty coconut lime energy bites made with oats, coconut, lime, and nut butter for an easy, no-bake healthy snack.
Ingredients
1 1/2 cups old-fashioned oats
1 cup shredded coconut
1/2 cup nut butter (almond, cashew, or peanut)
1/3 cup honey or maple syrup
2 tbsp coconut oil (optional)
Zest and juice of 2 limes
1 tsp vanilla extract
Pinch of salt
Optional: 2 tbsp chia seeds or flaxseed
Instructions
1. In a large bowl, combine oats, shredded coconut, and chia seeds if using.
2. In a separate bowl, mix nut butter, honey or maple syrup, coconut oil, lime zest, lime juice, vanilla, and salt until smooth.
3. Pour wet ingredients into dry ingredients and mix until a sticky dough forms.
4. Roll the mixture into bite-sized balls using your hands.
5. Place on a tray and refrigerate for at least 30 minutes to firm up.
6. Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.
Notes
Add mini chocolate chips for a sweet twist.
Swap lime for lemon or orange zest for variety.
Omit coconut oil if your nut butter is runny enough.
