Delightful soft and chewy cookies packed with the warm flavors of cookie butter, perfect for any sweet tooth.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup cake flour
  • 2 tsp cornstarch
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (cold)
  • 1/2 cup creamy cookie butter (Biscoff)
  • 3/4 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 Tbsp cookie butter emulsion (or vanilla extract)
  • 1 tsp vanilla extract
  • 1 1/2 cups chocolate chips
  • 10 crushed Biscoff cookies

Instructions

  1. Preheat your oven to 375°F and line two baking sheets with parchment paper.
  2. In a mixing bowl, whisk together the all-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt until combined.
  3. In a stand mixer, cream together the cold butter and cookie butter with the brown and granulated sugars until smooth.
  4. Add the egg, egg yolk, cookie butter emulsion (or vanilla extract), and vanilla. Mix until well combined.
  5. Gradually stir the dry mixture into the wet mixture until just combined.
  6. Gently fold in the chocolate chips and crushed Biscoff cookies.
  7. Shape the dough into large balls and place them on the prepared sheets, spacing them apart.
  8. Bake for about 10 to 12 minutes or until the edges are slightly golden.
  9. Let them cool on the sheet for a bit before transferring to a wire rack.

Notes

Store leftovers in an airtight container at room temperature. Can be frozen for later baking.
