- 4 cloves Garlic (minced)
- 2 tablespoons Fresh Ginger (grated)
- 1 tablespoon Soy Sauce (gluten-free tamari is a good alternative)
- 1 tablespoon Sesame Oil
- 1 medium Yellow Onion (diced)
- 6 cups Chicken Broth (low sodium, or vegetable broth for vegetarian options)
- 1 cup Shredded Carrots (or red bell pepper)
- 4 cups Green Cabbage (thinly sliced, or Napa cabbage)
- 1/2 cup Green Onions (chopped, reserve some for garnish)
- 1 tablespoon Rice Vinegar (or apple cider vinegar)
- Salt and Pepper (to taste)
- 2 Beaten Eggs (optional)
- Red Pepper Flakes or Sriracha (optional)
Instructions
- In a large pot, heat the sesame oil over medium heat. Add the diced yellow onion and sauté until soft, about 3-4 minutes.
- Toss in the minced garlic and grated ginger. Cook until fragrant, about 1 minute.
- Add the ground pork and cook until browned, breaking it up as you go.
- Stir in the soy sauce, then pour in the chicken broth and bring to a gentle boil.
- Once boiling, add the shredded carrots and cabbage. Reduce heat and let it simmer for about 10 minutes.
- Taste and season with salt, pepper, and rice vinegar.
- If desired, swirl in the beaten eggs while stirring.
- Add chopped green onions, saving some for garnishing later.
- For extra heat, sprinkle in red pepper flakes or drizzle with Sriracha.
Notes
Feel free to add other vegetables like broccoli or snap peas. For a vegetarian option, replace the pork with crumbled tofu or more veggies.
