- 1 cup fresh or frozen cranberries
- 1 orange (juiced and zested)
- 1/2 cup brown sugar
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, combine cranberries, orange juice, orange zest, and brown sugar. Mix well.
- In a skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, and garlic powder. Sear the chicken for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish. Pour the cranberry mixture over the chicken.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
- Garnish with fresh parsley if desired and serve warm.
Notes
For extra flavor, marinate the chicken in the cranberry mixture for a couple of hours before cooking. If using fresh cranberries, ensure they are plump and bright.
