Description

A delightful loaf bursting with fresh lemon flavor and a creamy swirl of sweet cream cheese.


Ingredients

  • 1 cup granulated sugar
  • 3 eggs
  • 8 oz sour cream
  • 1/2 cup vegetable oil
  • Zest of 2 lemons
  • Juice of 1 lemon
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1 tsp salt
  • 8 oz cream cheese (softened)
  • 1/3 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F and grease a 9×5-inch loaf pan.
  2. Combine the sugar, eggs, sour cream, lemon zest, lemon juice, vanilla, and vegetable oil in a large bowl until smooth.
  3. Fold in the baking powder, salt, and all-purpose flour until just combined.
  4. Mix the softened cream cheese and powdered sugar in a separate bowl until smooth.
  5. Pour half of the lemon batter into the prepared loaf pan.
  6. Spoon half of the cream cheese mixture on top and swirl with a butter knife.
  7. Add the remaining lemon batter and top with the remaining cream cheese mixture, swirling again.
  8. Bake uncovered for 45 minutes, then cover with foil and bake for another 15-25 minutes until a toothpick comes out clean.
  9. Cool completely before slicing.

Notes

Serve with butter, honey, or whipped cream for an extra treat! Keeps at room temperature for 2 days, refrigerated for up to a week, or frozen for three months.
