- 1 lb Ground Beef (or turkey or meat alternative)
- 1 large Onion (yellow or white)
- 3 cloves Garlic (minced)
- 4 cups Beef Broth (or vegetable broth for vegetarian option)
- 14.5 oz Diced Tomatoes (canned with juice)
- 1 cup Corn (canned or frozen)
- 15 oz Black Beans (drained and rinsed if canned)
- 2 medium Potatoes (Yukon Gold or russet, diced small)
- 1 tbsp Smoked Paprika
- 1 tbsp Chili Powder (adjust for heat preference)
- 1 tsp Cumin
- 1 tsp Salt (adjust to taste)
- 0.5 tsp Black Pepper (adjust to taste)
- 1 cup Heavy Cream (or coconut milk for dairy-free)
- 1 cup Shredded Cheddar Cheese (fresh cheese preferred)
Instructions
- Heat a large pot over medium-high heat. Add the ground beef and brown it, breaking it up until no pink remains. Drain excess fat if needed.
- Add the diced onion to the pot and sauté until soft, about 4 minutes. Stir in the minced garlic and cook for 30 seconds.
- Sprinkle in smoked paprika, chili powder, cumin, salt, and black pepper. Stir for 30 seconds to bloom the spices.
- Add diced potatoes, diced tomatoes with their juice, and beef broth. Stir to combine and bring to a simmer.
- Reduce heat and simmer until potatoes are tender, about 12–15 minutes, stirring occasionally.
- Add corn and black beans and simmer for 3–4 more minutes to heat through.
- Lower the heat and stir in heavy cream and shredded cheddar until the cheese melts and the soup turns creamy. Taste and adjust seasoning.
- Serve hot, topped with your favorite toppings like extra cheese, green onions, or a dollop of sour cream.
