Ingredients

  • 1 lb Ground Beef (or turkey or meat alternative)
  • 1 large Onion (yellow or white)
  • 3 cloves Garlic (minced)
  • 4 cups Beef Broth (or vegetable broth for vegetarian option)
  • 14.5 oz Diced Tomatoes (canned with juice)
  • 1 cup Corn (canned or frozen)
  • 15 oz Black Beans (drained and rinsed if canned)
  • 2 medium Potatoes (Yukon Gold or russet, diced small)
  • 1 tbsp Smoked Paprika
  • 1 tbsp Chili Powder (adjust for heat preference)
  • 1 tsp Cumin
  • 1 tsp Salt (adjust to taste)
  • 0.5 tsp Black Pepper (adjust to taste)
  • 1 cup Heavy Cream (or coconut milk for dairy-free)
  • 1 cup Shredded Cheddar Cheese (fresh cheese preferred)

Instructions

  1. Heat a large pot over medium-high heat. Add the ground beef and brown it, breaking it up until no pink remains. Drain excess fat if needed.
  2. Add the diced onion to the pot and sauté until soft, about 4 minutes. Stir in the minced garlic and cook for 30 seconds.
  3. Sprinkle in smoked paprika, chili powder, cumin, salt, and black pepper. Stir for 30 seconds to bloom the spices.
  4. Add diced potatoes, diced tomatoes with their juice, and beef broth. Stir to combine and bring to a simmer.
  5. Reduce heat and simmer until potatoes are tender, about 12–15 minutes, stirring occasionally.
  6. Add corn and black beans and simmer for 3–4 more minutes to heat through.
  7. Lower the heat and stir in heavy cream and shredded cheddar until the cheese melts and the soup turns creamy. Taste and adjust seasoning.
  8. Serve hot, topped with your favorite toppings like extra cheese, green onions, or a dollop of sour cream.

Notes

Serve with warm bread or a simple sandwich. Add a crisp salad for freshness.
