Description

Ingredients

Pasta – 8 oz

Mixed mushrooms (cremini, shiitake) – 12 oz

Heavy cream – 1 cup

Garlic, minced – 3 cloves

Fresh thyme – 1 tsp

Parmesan, grated – 1/2 cup

Olive oil or butter – 2 tbsp

Salt & pepper – to taste


Instructions

1. Cook pasta in salted water; reserve 1 cup pasta water.

2. Heat oil in a skillet; add mushrooms in a single layer; let brown.

3. Add garlic and thyme; cook until fragrant.

4. Deglaze with white wine or broth if desired.

5. Add cream and simmer gently.

6. Add cooked pasta and parmesan, tossing to coat.

7. Use reserved pasta water to adjust consistency.

8. Season with salt and pepper; serve warm.

Notes

For a dairy-free option, use coconut cream and omit parmesan.

Add spinach or peas for extra greens.

Reheat with a splash of milk to keep creamy.
