Description

A quick and easy creamy pasta dish featuring rotisserie chicken and broccoli, perfect for busy weeknights.


Ingredients

  • 1 lb penne pasta
  • 1 whole rotisserie chicken (34 lbs, shredded, about 4 cups meat)
  • 4 cups broccoli florets (fresh or frozen)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced fine)
  • 1 medium yellow onion (diced small)
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1/2 cup chicken broth (low-sodium)
  • 1 cup Parmesan cheese (freshly grated)
  • 1/2 cup mozzarella cheese (whole milk, shredded)
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the penne and cook according to package directions until al dente.
  2. During the last 3 minutes of cooking, add the broccoli florets straight to the pasta water.
  3. Before draining, scoop out 1 cup of the starchy pasta water and set aside.
  4. Drain the pasta and broccoli together.
  5. Heat olive oil and butter in a skillet over medium-low heat. Add diced onion and cook for 4-5 minutes until softened.
  6. Stir in minced garlic and cook for 30 seconds until fragrant.
  7. Pour in heavy cream and chicken broth; bring to a gentle simmer for 2-3 minutes.
  8. Remove from heat before adding cheeses and whisk until smooth.
  9. Add Italian seasoning, garlic powder, and red pepper flakes if desired.
  10. Add the drained pasta and broccoli to the sauce, tossing to coat.
  11. Fold in shredded rotisserie chicken last.
  12. Add reserved pasta water until the sauce reaches a creamy consistency.
  13. Stir in a cold knob of butter before serving.

Notes

For additional flavor, squeeze lemon on top before serving. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
