Description

A cozy and heartwarming dish featuring penne pasta, broccoli, and rotisserie chicken in a rich cream sauce.

Ingredients

Scale
  • 1 lb penne pasta
  • 1 whole rotisserie chicken (34 lbs, shredded, about 4 cups meat)
  • 4 cups broccoli florets (fresh or frozen)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced fine)
  • 1 medium yellow onion (diced small)
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1/2 cup chicken broth (low-sodium)
  • 1 cup Parmesan cheese (freshly grated)
  • 1/2 cup mozzarella cheese (whole milk, shredded)
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Boil a large pot of salted water. Cook the penne pasta according to package directions until al dente.
  2. During the last 3 minutes of cooking, add broccoli florets to the pasta water.
  3. Save 1 cup of starchy pasta water before draining, then drain pasta and broccoli together.
  4. In a large skillet, heat olive oil and butter over medium-low heat. Sauté diced onion for 4-5 minutes until softened.
  5. Add minced garlic and sauté for an additional 30 seconds.
  6. Pour in heavy cream and chicken broth, and bring to a gentle simmer for 2-3 minutes.
  7. Remove from heat and whisk in Parmesan and mozzarella cheeses until smooth.
  8. Season with Italian seasoning, garlic powder, salt, and pepper. Add red pepper flakes if desired.
  9. Fold in drained pasta and broccoli, tossing gently until coated with creamy sauce.
  10. Stir in shredded rotisserie chicken, adding reserved pasta water until desired sauce consistency is achieved.
  11. For extra flavor, stir in a cold knob of butter just before serving.

Notes

For a lighter version, substitute half and half for the heavy cream. You can also switch up the cheeses for different flavors.
