A creamy and cheesy shrimp scampi pasta bake that’s quick to prepare and perfect for a cozy dinner.

- 1 pound shrimp, peeled and deveined
- 8 ounces pasta (such as penne or fusilli)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the pasta according to package instructions until al dente, then drain.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add shrimp to the skillet and cook until pink and cooked through.
- Stir in heavy cream, half of the Parmesan cheese, and season with salt and pepper.
- In a large mixing bowl, combine the cooked pasta, shrimp mixture, and half of the mozzarella cheese.
- Transfer the mixture to a greased baking dish. Top with remaining mozzarella and Parmesan cheese.
- Bake for 20-25 minutes or until the top is golden and bubbly.
- Garnish with chopped parsley and serve hot.
Notes
Use medium shrimp to ensure tenderness and avoid overcooking. Salt lightly before baking and taste the sauce as you go to adjust seasoning.
