  • 1/4 cup Heavy Whipping Cream
  • 1 cup Shredded Cheddar Cheese
  • 1 pound Ground Beef
  • 2 tablespoons Taco Seasoning
  • 4 pieces Low-Carb Tortillas
  • 1 cup Sour Cream
  • 1 cup Lettuce (shredded)
  • 1 medium Tomato
  • 1 cup Extra Cheddar Cheese
  • 1/4 cup Cilantro
  • 1/2 cup Jalapeño Slices (optional)
  • 1 tablespoon Olive Oil

Instructions

  1. Melt butter in a small saucepan over low heat. Add cream cheese and stir until smooth. Pour in heavy whipping cream and bring to a low simmer. Stir in cheddar until the sauce is glossy and smooth.
  2. Heat olive oil in a skillet over medium-high heat. Add ground beef and cook until browned. Drain excess fat, add taco seasoning, and a splash of water to coat the meat. Simmer for 1-2 minutes, then turn off the heat.
  3. Warm tortillas in a clean skillet for 15-20 seconds per side. Toast for extra crunch if desired.
  4. Lay a warmed tortilla flat. Spoon a quarter of the beef mixture into the center, add cheese sauce, sour cream, lettuce, tomato, extra cheese, cilantro, and jalapeños. Fold the edges up to form a wrapped disc.
  5. Add butter or oil to the skillet over medium heat. Place the wrapped crunchwrap seam-side down and cook for 3-4 minutes until golden. Flip and repeat until cheese melts and the exterior is crisp.
  6. Let rest for one minute and slice in half if desired. Serve warm with extra sour cream.
