A soft, fluffy milk bread that’s perfect for sandwiches, toasting, and more!
Ingredients

- 500 g bread flour (3¾ cup)
- 40 g sugar (3 tbsp)
- 1½ tsps instant yeast
- 225 g cold water (a little bit less than 1 cup)
- 115 g cold milk (½ cup)
- 9 g sea salt (1½ tsp)
- 25 g unsalted butter (1¾ tbsp)
- Butter for coating the pan and brushing the bread
- Flour for coating the pan
Instructions
- In a large bowl, combine the bread flour, sugar, instant yeast, and sea salt. Whisk to blend.
- In another bowl, mix cold water and cold milk. Pour into dry ingredients and add unsalted butter.
- Mix with a spatula or hands until a sticky dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a kitchen towel, and let rise for about 1 hour or until doubled in size.
- Gently punch down the dough, turn it out, and shape it into a loaf.
- Place in a greased loaf pan, cover, and let rise for another 30 minutes.
- Preheat the oven to 350°F (175°C). Brush the top with melted butter and bake for 30-35 minutes or until it sounds hollow when tapped.
- Let cool in the pan for about 10 minutes before transferring to a wire rack.
Notes
For a hint of sweetness, add a tablespoon of honey to the milk. Alternatively, experiment with herbs, chocolate chips, or dried fruits.
