  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 3 cups mashed potatoes (prepared from about 3 large potatoes)
  • 2 tablespoons butter
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, cook the ground beef over medium heat until nicely browned. Drain any excess fat.
  3. Toss in the chopped onion and minced garlic. Cook for about 3 to 4 minutes, until soft and fragrant.
  4. Stir in the frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Let it simmer for about 5 to 7 minutes until it thickens a little.
  5. Transfer the beef mixture into a casserole dish and spread it out evenly.
  6. Top with prepared mashed potatoes, spreading to cover the filling completely.
  7. Dot the top with butter and sprinkle on shredded cheddar cheese if desired.
  8. Bake in the preheated oven for 20 to 30 minutes until the top is golden and bubbly.
  9. Let it cool for about 5 minutes before serving.

Notes

For extra flavor, add herbs like thyme or rosemary. For a creamier topping, mix a bit of sour cream or cream cheese into your mashed potatoes. This dish can be made vegetarian by swapping ground beef for lentils.
