  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups shredded rotisserie chicken
  • 1 teaspoon dried thyme
  • 1/2 teaspoon pepper
  • 1 tablespoon Worcestershire sauce (optional)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. In a large oven-safe skillet, melt the butter and olive oil over medium heat. Add onions, sugar, and salt; cook for 20–25 minutes until caramelized. Stir in garlic last minute.
  2. Stir in orzo and toast for about 2 minutes.
  3. Add shredded chicken, thyme, pepper, and Worcestershire sauce; mix well.
  4. Pour in chicken broth and heavy cream; bring to a gentle simmer. Cover and cook for 8–10 minutes until orzo is tender.
  5. Stir in mozzarella and Parmesan cheeses until melted.
  6. Preheat oven to 375°F (190°C). Sprinkle remaining mozzarella over the casserole and bake uncovered for 10–15 minutes until bubbly.
  7. Let it rest for 5–10 minutes before serving. Garnish with fresh thyme or parsley if desired.

Notes

Stringent on caramelizing the onions for optimal flavor; add breadcrumbs for crunch or swap heavy cream for half-and-half for a lighter version.
