- 2 cups sliced onions
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 tablespoon sugar
- 1 teaspoon salt
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups shredded rotisserie chicken
- 1 teaspoon dried thyme
- 1/2 teaspoon pepper
- 1 tablespoon Worcestershire sauce (optional)
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
Instructions
- In a large oven-safe skillet, melt the butter and olive oil over medium heat. Add onions, sugar, and salt; cook for 20–25 minutes until caramelized. Stir in garlic last minute.
- Stir in orzo and toast for about 2 minutes.
- Add shredded chicken, thyme, pepper, and Worcestershire sauce; mix well.
- Pour in chicken broth and heavy cream; bring to a gentle simmer. Cover and cook for 8–10 minutes until orzo is tender.
- Stir in mozzarella and Parmesan cheeses until melted.
- Preheat oven to 375°F (190°C). Sprinkle remaining mozzarella over the casserole and bake uncovered for 10–15 minutes until bubbly.
- Let it rest for 5–10 minutes before serving. Garnish with fresh thyme or parsley if desired.
Notes
Stringent on caramelizing the onions for optimal flavor; add breadcrumbs for crunch or swap heavy cream for half-and-half for a lighter version.
