Tender beef bites simmered with baby potatoes in a luscious garlic butter sauce, perfect for cozy dinners.


Ingredients

  • 1.5 pounds beef stew meat, cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon salt, or to taste
  • 0.25 teaspoon black pepper
  • 0.25 cup beef broth
  • 1 tablespoon olive oil

Instructions

  1. Cut beef into bite-sized pieces and halve the baby potatoes. Optionally, parboil the potatoes for a few minutes.
  2. Heat olive oil in a skillet over medium-high heat and sear the beef until browned.
  3. In a bowl, combine melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper, and mix well.
  4. In a slow cooker, add the halved baby potatoes and seared beef, then pour the garlic butter sauce over top and add beef broth.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until beef is fork-tender.
  6. Let it rest for about 10 minutes before serving.
  7. Scoop onto plates and drizzle with remaining sauce. Garnish as desired.

Notes

Serve with warm crusty bread or creamy mashed potatoes. Reheat leftovers in the microwave or stove.
