- 1.5 pounds beef stew meat, cut into bite-sized pieces
- 1 pound baby potatoes, halved
- 4 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 0.5 teaspoon dried thyme
- 0.5 teaspoon dried rosemary
- 0.5 teaspoon salt, or to taste
- 0.25 teaspoon black pepper
- 0.25 cup beef broth
- 1 tablespoon olive oil
Instructions
- Cut beef into bite-sized pieces and halve the baby potatoes. Optionally, parboil the potatoes for a few minutes.
- Heat olive oil in a skillet over medium-high heat and sear the beef until browned.
- In a bowl, combine melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper, and mix well.
- In a slow cooker, add the halved baby potatoes and seared beef, then pour the garlic butter sauce over top and add beef broth.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until beef is fork-tender.
- Let it rest for about 10 minutes before serving.
- Scoop onto plates and drizzle with remaining sauce. Garnish as desired.
Notes
Serve with warm crusty bread or creamy mashed potatoes. Reheat leftovers in the microwave or stove.
