A comforting meatloaf made with ground chicken, fresh garlic, and Parmesan cheese, perfect for a family meal or cozy night in.
Ingredients

- 1 lb ground chicken
- 4 cloves fresh garlic, minced
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs (plain or Italian-seasoned)
- 2 large eggs
- 1 medium onion, diced
- 2 tbsp soy sauce (low-sodium recommended)
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
- Sauté diced onions over medium heat until soft, about 5 minutes.
- In a large bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, black pepper, and half of the Parmesan. Mix until just combined.
- Shape the mixture into a loaf and place it in the greased baking dish. Sprinkle remaining Parmesan on top.
- Bake for 45-50 minutes until the internal temperature reaches 165°F (74°C), then let rest for 10 minutes before slicing.
Notes
Add paprika or Italian seasoning for extra flavor. Store leftovers in an airtight container; they last 3-4 days in the fridge or 3 months in the freezer.
