Ingredients

  • 3/4 cup milk (dairy or non-dairy)
  • 1/4 cup butter, melted
  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the chicken broth over medium heat. Add the diced carrots, celery, and onion. Cook until tender and fragrant.
  2. Stir in the shredded chicken and season with garlic powder, salt, and pepper.
  3. In a separate bowl, mix gluten-free flour, baking powder, and salt. Add milk and melted butter, stirring until combined.
  4. Drop spoonfuls of the dumpling mixture into the simmering broth.
  5. Cover the pot and cook for 10-12 minutes until the dumplings puff up.
  6. Serve hot, optionally garnished with fresh parsley.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. You can add a splash of water or broth when reheating.
