- 2 cups gluten-free flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup milk (dairy or non-dairy)
- 1/4 cup butter, melted
- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large pot, heat the chicken broth over medium heat. Add the diced carrots, celery, and onion. Cook until tender and fragrant.
- Stir in the shredded chicken and season with garlic powder, salt, and pepper.
- In a separate bowl, mix gluten-free flour, baking powder, and salt. Add milk and melted butter, stirring until combined.
- Drop spoonfuls of the dumpling mixture into the simmering broth.
- Cover the pot and cook for 10-12 minutes until the dumplings puff up.
- Serve hot, optionally garnished with fresh parsley.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. You can add a splash of water or broth when reheating.
