- 2 cups gluten-free flour blend
- 1/2 cup sourdough starter discard
- 1/2 cup raisins
- 1/4 cup sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup warm water
- 1/4 cup olive oil
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
Instructions
- Preheat your oven to 375°F (190°C). Grease a loaf pan and set it aside.
- Combine the gluten-free flour blend, sugar, cinnamon, salt, baking powder, and baking soda in a large mixing bowl. Mix well.
- Whisk together the sourdough starter, warm water, and olive oil in another bowl until smooth.
- Pour the wet ingredients into the dry mixture. Stir until everything is combined and looks lovely.
- Fold in the sweet raisins.
- Pour the batter into your prepared loaf pan, smoothing out the top with a spatula.
- Bake for about 35-40 minutes. It’s done when a toothpick inserted into the center comes out clean.
- Cool the bread in the pan for a bit before transferring it to a wire rack. Wait until it’s cool before slicing.
Notes
For a different flavor twist, swap out raisins for dried apricots or cranberries.
