Description

A delightful gluten-free sourdough raisin bread, perfect for breakfast or a cozy snack, made with sweet raisins and a touch of cinnamon.


Ingredients

  • 2 cups gluten-free flour blend
  • 1/2 cup sourdough starter discard
  • 1/2 cup raisins
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup warm water
  • 1/4 cup olive oil
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a loaf pan and set it aside.
  2. Combine the gluten-free flour blend, sugar, cinnamon, salt, baking powder, and baking soda in a large mixing bowl. Mix well.
  3. Whisk together the sourdough starter, warm water, and olive oil in another bowl until smooth.
  4. Pour the wet ingredients into the dry mixture. Stir until everything is combined and looks lovely.
  5. Fold in the sweet raisins.
  6. Pour the batter into your prepared loaf pan, smoothing out the top with a spatula.
  7. Bake for about 35-40 minutes. It’s done when a toothpick inserted into the center comes out clean.
  8. Cool the bread in the pan for a bit before transferring it to a wire rack. Wait until it’s cool before slicing.

Notes

For a different flavor twist, swap out raisins for dried apricots or cranberries.
