Description

A healthy and colorful bowl filled with grilled chicken, quinoa, and fresh veggies, topped with tzatziki sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups cooked quinoa or rice
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 cup kalamata olives, pitted and sliced
  • Feta cheese, crumbled (optional)
  • Fresh parsley, chopped (for garnish)
  • Tzatziki sauce (for serving)

Instructions

  1. Preheat the grill or oven to medium-high heat. Season the chicken breasts with olive oil, oregano, salt, and pepper. Grill or bake the chicken for 6-7 minutes on each side, or until cooked through and no longer pink in the center. Let rest for a few minutes, then slice.
  2. In a large bowl, combine cooked quinoa or rice, diced cucumber, cherry tomatoes, red onion, and olives. Toss to combine.
  3. To make the bowls, divide the quinoa mixture among serving bowls, top with sliced chicken, and drizzle with tzatziki sauce.
  4. Garnish with feta cheese and fresh parsley before serving.

Notes

Serve warm or at room temperature. Add more tzatziki if you prefer a creamier bite.
