Description

A wholesome Greek Chicken Bowl with marinated chicken, crisp veggies, creamy feta, and zesty tzatziki.


Ingredients

  • 2 Chicken breasts
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 2 cloves Garlic, minced
  • 1 teaspoon Oregano
  • 1 Cucumber, chopped
  • 2 Tomatoes, diced
  • 1 Red onion, sliced
  • 1/2 cup Feta cheese, crumbled
  • 1/2 cup Tzatziki sauce
  • 2 cups Rice or quinoa (optional)

Instructions

  1. Marinate the chicken breast in olive oil, lemon juice, minced garlic, and oregano for at least 30 minutes.
  2. Grill or pan-cook the chicken until cooked through and golden brown.
  3. Prepare the tzatziki sauce by mixing grated cucumber, yogurt, garlic, lemon juice, and salt.
  4. Chop the fresh veggies: cucumber, tomatoes, and red onion.
  5. Let the chicken rest for a few minutes before slicing.
  6. In a bowl, layer the cooked chicken, chopped veggies, and tzatziki sauce over rice or quinoa if using.
  7. Top with crumbled feta cheese and serve.
