Ingredients

- 2 Chicken breasts
- 2 tablespoons Olive oil
- 2 tablespoons Lemon juice
- 2 cloves Garlic, minced
- 1 teaspoon Oregano
- 1 Cucumber, chopped
- 2 Tomatoes, diced
- 1 Red onion, sliced
- 1/2 cup Feta cheese, crumbled
- 1/2 cup Tzatziki sauce
- 2 cups Rice or quinoa (optional)
Instructions
- Marinate the chicken breast in olive oil, lemon juice, minced garlic, and oregano for at least 30 minutes.
- Grill or pan-cook the chicken until cooked through and golden brown.
- Prepare the tzatziki sauce by mixing grated cucumber, yogurt, garlic, lemon juice, and salt.
- Chop the fresh veggies: cucumber, tomatoes, and red onion.
- Let the chicken rest for a few minutes before slicing.
- In a bowl, layer the cooked chicken, chopped veggies, and tzatziki sauce over rice or quinoa if using.
- Top with crumbled feta cheese and serve.
Notes
Let the chicken marinate longer for more flavor. Consider using grilled veggies for a twist.
