  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the rolled oats, nuts, seeds, and dried fruits.
  3. In a separate bowl, mix together the nut butter, honey (or maple syrup), vanilla extract, and salt until well combined.
  4. Pour the wet mixture into the dry ingredients and stir until everything is fully coated.
  5. Scoop tablespoon-sized amounts of the mixture onto the prepared baking sheet, flattening them slightly.
  6. Bake in the preheated oven for about 10-12 minutes or until golden brown.
  7. Let cool completely on the baking sheet before transferring to an airtight container.

Notes

Feel free to swap out nuts and seeds based on your preferences. Adding a pinch of cinnamon or nutmeg can enhance flavor. These cookies can also be frozen for longer storage.
