Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the rolled oats, nuts, seeds, and dried fruits.
- In a separate bowl, mix together the nut butter, honey (or maple syrup), vanilla extract, and salt until well combined.
- Pour the wet mixture into the dry ingredients and stir until everything is fully coated.
- Scoop tablespoon-sized amounts of the mixture onto the prepared baking sheet, flattening them slightly.
- Bake in the preheated oven for about 10-12 minutes or until golden brown.
- Let cool completely on the baking sheet before transferring to an airtight container.
Notes
Feel free to swap out nuts and seeds based on your preferences. Adding a pinch of cinnamon or nutmeg can enhance flavor. These cookies can also be frozen for longer storage.
