Description

These buttery and soft Heart Jam Cookies hide a sweet pop of raspberry jam in a tiny heart, making them perfect for gifts or a cozy dessert plate.


Ingredients

  • 2 1/4 cups (280 g) all-purpose flour
  • 2 teaspoons cornstarch
  • 1/4 teaspoon salt
  • 1 cup unsalted butter (at room temperature)
  • 1/3 cup light brown sugar (packed)
  • 1/3 cup granulated sugar
  • 1 large egg yolk
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoons almond extract
  • 1/2 cup raspberry jam

Instructions

  1. Line two 13×9 baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cornstarch, and salt. Set aside.
  3. In a large bowl or stand mixer, cream butter with sugars for 2-3 minutes until creamy.
  4. Mix in egg yolk, vanilla, and almond extract.
  5. Lowly add dry ingredients to wet ingredients and mix.
  6. Using a 1 tablespoon dough scoop, make balls and roll smoothly.
  7. Place dough balls 2 inches apart on prepared sheets and press hearts into them.
  8. Chill in freezer for 30 minutes or refrigerator for 1 hour.
  9. Preheat oven to 375°F.
  10. Warm jam for 10-15 seconds and fill each heart indent with about 1/2 teaspoon jam.
  11. Bake cookies for 10-12 minutes until edges turn golden brown.
  12. Let cool on sheet for 5 minutes, then transfer to a cooling rack.

Notes

Use room temperature butter for a tender crumb and measure flour carefully. Storing cookies in an airtight container will keep them fresh for up to 4 days.
