Delicious homemade sourdough calzones with a chewy crust and light tang, perfect for cozy meals.
Ingredients

- 1/2 cup active sourdough starter (113g)
- 4 cups flour (600g)
- 1 1/2 cups water (354g)
- 2 teaspoons salt (10g)
- 2 tablespoons olive oil (26.6g)
- 1/4 cup sauce
- 8 ounces mozzarella cheese
- Favorite toppings
- 1 tablespoon olive oil (to brush on top)
Instructions
- Add the ingredients to the bowl of a stand mixer.
- Mix the dough on medium speed until it passes the windowpane test (about 10 minutes).
- Place the dough in an oiled bowl and cover.
- Let the dough rest at room temperature for about 480 minutes.
- Preheat oven to 425°F.
- Split the dough into 4 for large calzones or 6 for small ones.
- Roll each ball of dough into a circle about 1/4 inch thick.
- Add sauce and toppings to one half of the rolled-out dough.
- Fold it in half to create a half circle, pinch the edges together.
- Brush with olive oil and cut 2-3 slits on the top.
- Bake for 20-25 minutes for large or 15-20 minutes for small calzones until golden.
Notes
For best results, use active starter and keep toppings simple. Avoid overloading the calzone to prevent sogginess.
