A bright and easy dish that combines sweet honey, tangy lime, creamy avocado, and fresh cilantro over a bed of cilantro lime rice.


Ingredients

  • 2 chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 1 cup rice (cilantro lime rice)
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix honey and lime juice. Marinate chicken breasts in the mixture for at least 30 minutes.
  2. Cook the rice according to package instructions and stir in chopped cilantro.
  3. Grill or pan-sear the marinated chicken until fully cooked. Slice once done.
  4. Layer in bowls: start with cilantro lime rice, add sliced chicken, and top with sliced avocado.
  5. Season with salt and pepper to taste and serve fresh.

Notes

Use medium-high heat for a good sear. Let the chicken rest a few minutes before slicing. For a plant-based twist, swap chicken for a meaty mushroom.
