A bright and easy dish that combines sweet honey, tangy lime, creamy avocado, and fresh cilantro over a bed of cilantro lime rice.
Ingredients

- 2 chicken breasts
- 1/4 cup honey
- 1/4 cup lime juice
- 1 cup rice (cilantro lime rice)
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- In a bowl, mix honey and lime juice. Marinate chicken breasts in the mixture for at least 30 minutes.
- Cook the rice according to package instructions and stir in chopped cilantro.
- Grill or pan-sear the marinated chicken until fully cooked. Slice once done.
- Layer in bowls: start with cilantro lime rice, add sliced chicken, and top with sliced avocado.
- Season with salt and pepper to taste and serve fresh.
Notes
Use medium-high heat for a good sear. Let the chicken rest a few minutes before slicing. For a plant-based twist, swap chicken for a meaty mushroom.
