Ingredients

- 1 lb chicken, diced
- 1 lb sausage, sliced
- 1 lb shrimp, peeled and deveined
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups chicken broth
- 2 cups long-grain rice
- 2 teaspoons Cajun seasoning
- 2 teaspoons Creole seasoning
- Salt and pepper to taste
- Oil for cooking
- Green onions for garnish
Instructions
- In a large pot, heat oil over medium heat.
- Add the chicken and sausage; cook until browned.
- Add the onion, bell pepper, celery, and garlic; cook until softened.
- Stir in the diced tomatoes, chicken broth, rice, Cajun seasoning, and Creole seasoning.
- Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes.
- Add the shrimp and cook for an additional 10 minutes or until shrimp are cooked through and rice is tender.
- Season with salt and pepper to taste, and garnish with green onions before serving.
Notes
Serve hot, optionally with crusty bread or buttered corn on the cob. Use fresh ingredients for the best flavor.
