Ingredients

  • 1 cup active sourdough starter
  • 3 cups all-purpose flour
  • 1 cup water
  • 2 tablespoons freshly squeezed lemon juice
  • Zest of 1 lemon
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1 cup fresh blueberries, tossed in flour

Instructions

  1. In a large bowl, combine the active sourdough starter, flour, water, lemon juice, lemon zest, sugar, and salt. Mix until a dough forms.
  2. Let the dough rest for 30 minutes, then perform a stretch and fold technique every 30 minutes for 2 hours.
  3. During the last stretch and fold, gently incorporate the floured blueberries.
  4. Allow the dough to rise until doubled in size, approximately 4-6 hours.
  5. Preheat the oven to 450°F (230°C).
  6. Shape the dough into a loaf and place it in a greased loaf pan or on a baking sheet.
  7. Cover and let it rest for another 1-2 hours until puffy.
  8. Bake in the preheated oven for 30-35 minutes until golden brown.
  9. Let cool before slicing.

Notes

For best results, use freshly squeezed lemon juice and avoid overmixing to prevent blueberries from bursting.
