- 1 cup active sourdough starter
- 3 cups all-purpose flour
- 1 cup water
- 2 tablespoons freshly squeezed lemon juice
- Zest of 1 lemon
- 1/4 cup sugar
- 1 teaspoon salt
- 1 cup fresh blueberries, tossed in flour
Instructions
- In a large bowl, combine the active sourdough starter, flour, water, lemon juice, lemon zest, sugar, and salt. Mix until a dough forms.
- Let the dough rest for 30 minutes, then perform a stretch and fold technique every 30 minutes for 2 hours.
- During the last stretch and fold, gently incorporate the floured blueberries.
- Allow the dough to rise until doubled in size, approximately 4-6 hours.
- Preheat the oven to 450°F (230°C).
- Shape the dough into a loaf and place it in a greased loaf pan or on a baking sheet.
- Cover and let it rest for another 1-2 hours until puffy.
- Bake in the preheated oven for 30-35 minutes until golden brown.
- Let cool before slicing.
Notes
For best results, use freshly squeezed lemon juice and avoid overmixing to prevent blueberries from bursting.
