Description
A bright, floral loaf cake using sourdough discard, lemon zest, and lavender for a moist, fragrant bake perfect for tea time or gifting.
Ingredients
1 cup sourdough discard
1 1/2 cups all-purpose flour
1 cup sugar
1/2 cup butter, softened
2 eggs
Zest of 2 lemons
2 tbsp lemon juice
1 tbsp dried culinary lavender
1 1/2 tsp baking powder
1/2 tsp salt
1/2 cup milk
Instructions
1. Preheat oven to 350°F and grease a loaf pan with parchment.
2. Cream butter and sugar until light and fluffy.
3. Add eggs one at a time, mixing well.
4. Stir in sourdough discard, lemon zest, and lemon juice.
5. In a separate bowl, whisk flour, baking powder, salt, and crushed lavender.
6. Alternate adding dry ingredients and milk to the wet mixture, mixing until just combined.
7. Pour batter into prepared loaf pan and smooth the top.
8. Bake for 50-55 minutes or until a toothpick comes out clean.
9. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
10. Optional: Drizzle with lemon glaze before serving.
Notes
For glaze, mix powdered sugar with lemon juice until pourable.
Use fresh culinary lavender if available.
Freeze slices individually for easy future snacks.
