Description

A vibrant, cozy sweet potato taco bowl layered with roasted sweet potatoes, black beans, avocado, and lime dressing, perfect for a nourishing dinner or meal prep.


Ingredients

2 medium sweet potatoes, diced

1 tbsp olive oil

1 tsp cumin

1/2 tsp smoked paprika

1/2 tsp chili powder

Salt to taste

1 can black beans, drained and rinsed

1 cup corn kernels

1 cup shredded red cabbage

1 avocado, sliced

Fresh cilantro, chopped

Juice of 1 lime


Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Toss diced sweet potatoes with olive oil, cumin, paprika, chili powder, and salt.

3. Roast sweet potatoes for 25–30 minutes until golden and tender.

4. In a bowl, combine black beans, corn, and lime juice.

5. Assemble bowls with roasted sweet potatoes, bean and corn mixture, cabbage, and avocado.

6. Top with fresh cilantro and additional lime if desired.

7. Serve warm and enjoy your cozy sweet potato taco bowl.

Notes

Add sliced jalapeños or feta for extra flavor.
