Description
Mediterranean quinoa salad is a fresh, easy lunch packed with fluffy quinoa, crisp vegetables, olives, feta, and a lemony dressing.
Ingredients
Quinoa – 1 cup uncooked
Cucumber, diced – 1 cup
Cherry tomatoes, halved – 1 cup
Red onion, finely diced – 1/4 cup
Kalamata olives, sliced – 1/3 cup
Feta cheese, crumbled – 1/2 cup
Fresh parsley, chopped – 1/4 cup
Fresh mint, chopped – 2 tbsp
Chickpeas (optional) – 1 cup
Baby spinach (optional) – 1 cup
Instructions
1. Rinse and cook quinoa; let cool.
2. Dice cucumber, tomatoes, red onion, and slice olives.
3. Chop fresh herbs and crumble feta.
4. Prepare dressing with lemon juice, olive oil, garlic, Dijon, honey, salt, pepper, oregano.
5. Combine quinoa, vegetables, herbs, and feta in a bowl.
6. Add dressing and toss gently to combine.
7. Taste and adjust seasoning; serve fresh.
Notes
Store in an airtight container for up to 4-5 days.
Keep dressing separate if storing for multiple days for freshness.
Optional add-ins: avocado, bell peppers, toasted pistachios.
