  • Biscoff cookies (for crust)
  • Butter (melted, for crust)

  • Biscoff spread

Instructions

  1. Crush the Biscoff cookies in a zip-top bag or food processor, then mix with melted butter until it resembles wet sand.
  2. Press the cookie mixture firmly into the bottom of mini cups.
  3. Beat the cream cheese until smooth, then gradually add powdered sugar and vanilla extract, mixing until well combined.
  4. Gently fold in the heavy cream until mixed and airy.
  5. Add the Biscoff spread and a sprinkle of cinnamon, then mix until blended.
  6. Spoon the cheesecake filling over the crusts in mini cups and refrigerate for at least 4 hours until set.
