Ingredients
1 cup rolled oats
2 ripe bananas
2 large eggs
1/2 cup milk (dairy or plant-based)
1 tsp baking powder
1 tsp vanilla extract
1/2 tsp cinnamon (optional)

Maple syrup for serving
Instructions
1. Add all ingredients to a blender. Blend until smooth.
2. Let batter rest for 5 minutes.
3. Heat a skillet over medium heat and lightly grease.
4. Pour 1/4 cup of batter per pancake.
5. Cook until bubbles form and edges firm, about 2-3 minutes.
6. Flip and cook the other side for 1-2 minutes.
7. Repeat with remaining batter.
