A delightful lemon dessert that’s easy to make in just one bowl, perfect for any occasion.


Ingredients

  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/2 cup whole milk
  • Zest of 2 lemons
  • 1/3 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking pan.
  2. In a large bowl, whisk together the eggs and sugar until pale and thick. Add vegetable oil, milk, lemon zest, lemon juice, and vanilla extract. Mix until combined.
  3. Sift in flour, baking powder, and salt, and gently fold until smooth.
  4. Pour batter into the prepared pan and bake for 28 to 32 minutes.
  5. Allow to cool completely, then dust with powdered sugar before cutting into squares.
  6. Serve warm or chilled, optionally with vanilla ice cream or fresh berries.

Notes

For best results, zest lemons before juicing and feel free to add more lemon juice for extra tang. You can also substitute poppy seeds for crunch.
