Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking pan by greasing it or lining it with parchment paper.
- In a large mixing bowl, whisk together the eggs and sugar until pale and slightly thickened. Add the oil, milk, lemon zest, lemon juice, and vanilla extract, stirring until well combined.
- Sift the flour, baking powder, and salt directly into the wet mixture, and gently fold until just combined.
- Pour the batter into the prepared pan and bake for 28-32 minutes, or until the top is lightly golden and a toothpick inserted comes out clean.
- Allow the cake to cool completely in the pan, then dust with powdered sugar before cutting into squares or rectangles.
