- ¼ tsp nutmeg
- Pinch of salt
- ½ cup unsalted butter (melted)
- ¾ cup raw honey
- 2 large eggs
- 1 cup fresh orange juice
- Zest of 2 oranges
- 1 tbsp grated fresh ginger
- 2 tbsp honey (optional glaze)
- 2 tbsp orange juice (optional glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease your baking pan.
- In a bowl, whisk together the dry ingredients: flour, baking soda, ginger, cinnamon, nutmeg, and salt.
- In another bowl, combine the melted butter, honey, and eggs, mixing until well combined.
- Stir in the fresh orange juice, orange zest, and grated ginger.
- Gradually fold the dry mixture into the wet ingredients without overmixing.
- Pour the batter into your prepared pan and bake for 40-45 minutes.
- Brush with the optional honey-orange glaze if desired.
- Allow the cake to cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
Notes
Serve with whipped cream or vanilla ice cream for an extra treat. Can be stored in an airtight container at room temperature for up to 3 days, or in the fridge for a week.
