Instructions
- Prep baking sheets lined with parchment paper and create circles for sizing.
- In a bowl, combine almond flour and powdered sugar, sift to avoid lumps.
- Whisk egg whites until foamy, gradually add granulated sugar until stiff peaks, then fold in almond mixture and peppermint extract.
- Pipe small circles onto the sheets, tapping to release air bubbles.
- Rest piped macarons at room temperature for 30-60 minutes until dry to touch.
- Preheat oven to 300°F (150°C) and bake for 15-20 minutes, cool completely.
- Beat softened butter until creamy, add powdered sugar and peppermint extract; adjust sweetness.
- Pair macarons with similar sizes and sandwich buttercream filling between them.
