Ingredients

Scale
  • 1 pound ground beef (80/20 fat)
  • 1 handful fresh parsley, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup fruity red wine (Merlot or Cabernet Sauvignon)
  • 1 can crushed tomatoes
  • 1 cup beef broth
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Chop the onion and mince the garlic.
  2. In a large bowl, mix the ground beef, parsley, onion, garlic, salt, and pepper thoroughly.
  3. Shape the mixture into golf ball-sized meatballs.
  4. Heat olive oil in a skillet over medium heat and brown the meatballs on all sides.
  5. Remove the meatballs and deglaze the skillet with red wine, scraping up the browned bits.
  6. Add crushed tomatoes and beef broth, bringing to a gentle simmer.
  7. Return the meatballs to the skillet, cover, and braise on low heat for about 30 minutes.

Notes

These meatballs can be served over pasta or in a meatball sandwich. Optional: add Italian seasoning or red pepper flakes for extra flavor.
